You're thinking he's the "real thing" and I would agree. You asked him out to coffee too early in the conversation and he didn't jump at the opportunity and instead asked you know more about you. It shows he has standards.
If you're not sure he's worth the wait, you should ask yourself what's causing you to think this way. You mention you prefer to talk in-person, but given that he's not able to right now, what questions could you ask him that would help you figure out whether he's worth the wait?
